Bran Refrigerator Muffins

These are meant to be made into a large quantity of batter that is stored in the refrigerator. Muffins can be made fresh whenever!

2 cups boiling water
2 cups sugar
1 cup vegetable oil
4 eggs (egg substitute okay)
1 quart buttermilk
5 cups flour
5 tsp. soda
6 cups All-Bran cereal
1 1/2 cups raisins

Pour boiling water over 2 cups All-Bran. Set aside. Combine sugar, oil, eggs and buttermilk. In a separate bowl, combine flour, soda and remaining 4 cups All-Bran. Combine wet and dry ingredients. Stir in the reserved All-Bran/water mixture (it should now be "melted" and soft). Fold in raisins. Bake at 400 degrees for 20-25 minutes. Store leftover batter in the refrigerator ~ DO NOT STIR BATTER ONCE IT HAS BEEN STORED! These muffins are also excellent for freezing! Make a dozen and send your LEO to work with one every morning!
