Gooey Pumpkin Butter Cake
CAKE
1 pkg Yellow Cake Mix
1 egg
1 stick of butter (8 TBSP)
FILLING
1 8 oz pkg Cream Cheese Softened
1 15 oz Can pumpkin puree
3 eggs
1 tsp Vanilla
1 stick of butter (8 TBSP) melted
1 16 oz box confectioners sugar
1 tsp cinnamon
1 tsp nutmeg
Directions
Preheat oven to 350. Combine Cake
ingredients and press into a greased 13X9 in pan. To prepare filling
beat cream cheese and pumpkin until smooth. Add eggs, vanilla,
and melted butter, beating until smooth. Add confectioners sugar
with cinnamon and nutmeg gradually, mixing until combined. Spread
pumpkin mix over cake batter and bake 40-50 minutes.
Do not overbake, it will be puffed
but gooey in the middle and will settle. It looks pretty ugly
but serve with whipped cream.
