Kat's Baked Pasta Wonder

Here is a nice baked pasta dish:

1/2 lb hard pasta cooked al'dente (penne works well)
1 jar prepared spaghetti sauce (use one of those ones you've been meaning to try like spicy tomato and pesto, or sun dried tomatoes and chunky mushrooms, avoid the spicy sausage because you are adding ground beef or chicken)
15 oz tub of ricotta cheese
1/4 cup freshly grated parmesan
8 oz grated mozzarella (divided)
1 egg
1/2 lb lean ground beef (buy the best you can afford, or add to the weight and boil to get rid of fat)

Preheat oven to 375, cook 35-40 min or till bubbling and piping hot.
Brown ground beef and drain fat. Stir in pasta sauce. In separate bowl mix together egg, ricotta cheese, 1 cup mozzarella and the parmesan cheese. Spray casserole pan (12X9X3) with non-stick cooking spray. Layer pasta, meat sauce and cheese mixture. Top with the reserved mozzarella cheese. This goes great with appetizers of Roma Tomatoes and fresh mozzarella with a fresh basil leaf, a crisp salad with choice of dressing, a nice red wine, and of course plenty of crusty garlic toast. Finish with a melt in your mouth dessert, and girls you have enough calories for the entire week....but lots of nice full belly feelings. =)
